Hello everyone!
April showers bring May flowers, and lots of swollen rivers and lakes,
not to mention creeks, and even small streams that were not there
before. Yes, here in Idaho we are experiencing record flood stage
levels at the Boise River and many other waterways throughout our Gem
State. Hmmm maybe those precious gems will float to the surface.
The ducks, around my home, are all twitterpated; Quacking from dawn to
dusk. Temps have been in the upper 60s, which is grand walking
weather. That began in March, and as usual, everyone was fooled into
an early spring and began preparing their gardens, planting
vegetables, only to be bitten by frost this past weekend with the
temps going below freezing. Funny how folks are so quick to forget
this fact each year.
Well now, onto the April news. Lots of great articles and notices this
month. You won’t want to miss a word. Please let folks know you read
their submission on the Blind Post. It helps the news, and also, my
writers love hearing from you. Thanks for sharing theBlind Post. I
have new subscribers and new visitors to the website. I also love

*** What is Easter Sunday?
## Answer: There is a lot of confusion regarding what Easter Sunday
is all about. For some, Easter Sunday is about the Easter Bunny,
colorfully decorated Easter eggs, and Easter egg hunts. Most people
understand that Easter Sunday has something to do with the
resurrection of Jesus, but are confused as to how the resurrection is
related to the Easter eggs and the Easter bunny.
Biblically speaking, there is absolutely no connection between the
resurrection of Jesus Christ and the common modern traditions related
to Easter Sunday. As a background, please read our article on the
origins of Easter. Essentially, what occurred is that in order to make
Christianity more attractive to non-Christians, the ancient Roman
Catholic Church mixed the celebration of Jesus’ resurrection with
celebrations that involved spring fertility rituals. These spring
fertility rituals are the source of the egg and bunny traditions.
The Bible makes it clear that Jesus was resurrected on the first day
of the week, Sunday (Matthew 28:1; Mark 16:2,9; Luke 24:1; John
20:1,19). Jesus’ resurrection is most worthy of being celebrated (see
1 Corinthians 15). While it is appropriate for Jesus’ resurrection to
be celebrated on a Sunday, the day on which Jesus’ resurrection is
celebrated should not be referred to as Easter. Easter has nothing to
do with Jesus’ resurrection on a Sunday.
As a result, many Christians feel strongly that the day on which we
celebrate Jesus’ resurrection should not be referred to as “Easter
Sunday.” Rather, something like “Resurrection Sunday” would be far
more appropriate and biblical. For the Christian, it is unthinkable
that we would allow the silliness of Easter eggs and the Easter bunny
to be the focus of the day instead of Jesus’ resurrection.
By all means, celebrate Christ’s resurrection on Easter Sunday.
Christ’s resurrection is something that should be celebrated every
day, not just once a year. At the same time, if we choose to celebrate
Easter Sunday, we should not allow the fun and games to distract our
attention from what the day should truly be all about—the fact that
Jesus was resurrected from the dead, and that His resurrection
demonstrates that we can indeed be promised an eternal home in Heaven
by receiving Jesus as our Savior.

## Choosing the hotel that best suits my needs
As a blind traveler, one of the most important things for me to do
before I leave home is to ensure that the hotel I stay at will be able
to meet my needs.
So here is how I go about doing this.
Before I even make my reservation, I ask the hotel if they cater to
the needs of a blind person. I never assume that they do it; for if I
were to do this
I would be very disappointed. So as they say, I take the initiative.
My checklist includes:
Making sure that a staff member can give me an orientation to my room.
That is, to show me how to operate the TV, and where the outlets are
located.
Next to orientate me to the tubes in the bathroom for it is often
difficult for me to decipher shampoo from conditioner and body wash
from body lotion.
Then I ask for an orientation to the in hotel restaurant and then to the pool.
Finally I ask for a very brief description of restaurants around the hotel.
Nine out of ten times hotel staff are very helpful and considerate and
help is often at my fingertips. This is the formula that works for me
and I hope
that it can help you too.

## I have been asked on several occasions why I use Servant Warrior as
a screen name, and if there is any significance or story behind it.
Here is an explanation excerpted from some recent journaling. I hope
you find it of interest. Please feel free to email me with any
questions about this article or anything else that comes to mind. I
may not be quick at responding, but I should respond eventually.
It was 2009. I was putting my life back together. Andrea and I had
been separated for close to a year, if not more. I had finally
accepted that I had to get better for me. I couldn’t get better in
order to win her back. I had to be willing to walk through the fire,
even if she never wanted me. I knew I had a hard road ahead of me. I
still do. Despite the fact Andrea and I have reunited, I still need to
walk forward for my own sake. Personal development through martial
arts or fitness or meditation or surrender to a religious ideal must
be something personal, or it will serve to be a source of frustration
and grief, worse than the thing you are trying to fix. All the
training is worthless, if you are doing it for the wrong reasons.
There will be gains, to be sure, but you will never calm the storm in
your own heart. Surrender. This is the first step. Walking it through
is next. Both will be ongoing and last your entire life.
It was at the time I realized this that I had an obligation. Some
might even describe it as a calling. I needed to live my life fully,
and I needed to share my story as I went. One of the first stepson
this path of sharing my story was creating a Twitter account. What
would my username be? This was a much more difficult decision than
some might imagine it to be. I had previously gone by the name of
Vapour Wiseblood, and while that name has some significance for me, it
had a lot of negativity attached to it. I needed something that would
inspire me, as well as anyone who might follow my exploits. I also
wanted to choose a name that wouldn’t suggest arrogance that I had
arrived and could never grow beyond my current level of maturity and
mastery of life. I also recognized that I would make mistakes along
the way, and I didn’t want to choose a name that would turn me into a
hypocrite when I inevitably dropped the ball.
I thought of what things inspired me. I had always been intrigued by
martial arts and stories of warriors, even before I began my own
martial arts journey. I also knew that service was an important ideal
of mine. An important image for me is Jesus washing the feet of his
disciples at the Last Supper. The Son of God was washing the feet of
mere mortals, one of whom would shortly betray him. Jesus was doing
the work of a slave, despite his position. Upon further research, I
discovered that one of the translations of the word samurai is “one
who serves”.
I chose Servant Warrior. This ideal of power and selflessness reminds
me what direction I should go. It doesn’t mean I always hit the mark.
In fact, sometimes I really blow it. The point is that I have a
compass heading for my ongoing journey. As I work with the master to
temper me and make me battle ready, it helps me understand where I
must apply pressure, and where I must allow my metal to cool. My goal
is to be a sword cutting through mediocrity, depression, and
powerlessness. I do not want to break under the strain of moving
forward, and I want to help others strive for a similar ideal.

Around this time of year there are many churches that serve a potluck
breakfast or brunch. Also many folks have family and friends over for
brunch after the services. Here are a few egg options that you might
want to consider.
## OLD-FASHIONED DEVILED EGGS
This recipe makes 24 deviled egg halves. This is an old favorite.
Hard cook the eggs 1 day in advance, then stuff them the morning you
plan on serving them.
12 large eggs, hard cooked, peeled, and halved lengthwise
2 tablespoons Dijon mustard
¼ cup mayonnaise
2 teaspoons white wine vinegar
¼ teaspoon hot sauce
Salt and pepper
3 to 4 tablespoons milk
Paprika for garnish
Step 1. Remove yolks from hard cooked eggs and reserve whites.
Step 2. In bowl, mash yolks with fork, or sieve yolks into bowl.
Step 3. Add remaining ingredients, except milk and paprika.
Step 4. Stir well to combine, adding just enough milk to reach
desired consistency.
Step 5. Mound filling in whites and sprinkle with paprika.
Step 6. Arrange eggs on serving platter.
## HARD COOKED EGGS
Fresh eggs
Step 1. Place eggs in saucepan.
Step 2. Add enough cold water to come 1 inch above eggs.
Step 3. Heat the water rapidly to boiling.
Step 4. Remove from heat. Cover and let stand 20 to 24 minutes.
Step 5. Immediately cool eggs in cold water to prevent additional cooking.
Step 6. Tap egg to crackle shell.
Step 7. Roll egg between hands to loosen shell. Hold the egg under
running cold water to help ease off shell.
## COUNTRY EGG CASSEROLE
This recipe serves 8 to 10.
2 cups frozen hash browns
10 hard cooked eggs, sliced
8 link sausages, cooked and cut in thirds
8 ounce can sliced mushrooms, drained
2 small cans cheddar cheese soup
1soup can milk
Salt and pepper to taste
Step 1. Preheat the oven to 350 degrees.
Step 2. Coat a 9 by 13 inch pan with nonstick spray.
Step 3. Layer the potatoes, sausages, eggs, and mushrooms.
Step 4. Sprinkle with salt and pepper, if desired.
Step 5. Combine the soup and milk and pour over the casserole.
Step 6. Bake for 30 to 35 minutes.
## OVERNIGHT SAUSAGE AND EGG BREAKFAST CASSEROLE
This recipe serves 8
1 pound bulk pork sausage
6 eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
6 slices white bread, cut into ½ inch cubes
1 cup, 4 ounces, shredded cheddar cheese
Step 1. Crumble sausage and brown in a skillet.
Step 2. Drain, blot with a paper towel and set aside.
Step 3. In a large bowl, beat eggs, milk, salt and mustard.
Step 4. Stir in bread cubes, cheese and sausage.
Step 5. Pour into a 9 inch square baking dish that has been lightly
coated with nonstick spray.
Step 6. Cover and refrigerate for 8 hours or overnight.
Step 7. Remove from the refrigerator 30 minutes before baking.
Step 8. Preheat oven to 350 degrees.
Step 9. Bake, uncovered, for 40 minutes or until a knife inserted
near the center comes out clean.
## CRAB SCRAMBLE CASSEROLE
Scrambled eggs meet a creamy blend of crabmeat, cream cheese and dill
weed in this brunch favorite.
This recipe makes 8 servings.
2 tablespoons butter or margarine, melted
½ cup milk
12 eggs
1 teaspoon salt
½ teaspoon white pepper
1 & ½ teaspoons chopped fresh dill weed or ½ teaspoon dried dill weed
1 cup chopped cooked crabmeat or imitation crabmeat
1 package, 8 ounces, cream cheese, cut into ½ -inch cubes
2 medium green onions, sliced (¼ cup)
Paprika
Step 1. Pour butter into 8 inch square baking dish. Tilt dish to coat bottom.
Step 2. Beat eggs, milk, salt, white pepper and dill weed in large
bowl, using fork or wire whisk.
Step 3. Stir in crabmeat, cream cheese and onions.
Step 4. Pour into baking dish. Cover and refrigerate up to 24 hours.
Step 5. About 1 hour before serving, heat oven to 350 degrees.
Step 6. Sprinkle egg mixture with paprika.
Step 7. Bake uncovered 45 to 50 minutes or until center is set.
Note: Perfect for entertaining, you can prepare this elegant egg dish
up to 24 hours before baking. Simply cover and place in a preheated
oven when ready to bake.
## BREAKFAST CASSEROLE IN THE CROCKPOT
This recipe serves 10.
1 bag, 32 ounces, frozen hash brown potatoes
1 pound bacon cut into pieces, fried crispy and drained
½ cup diced onions
1 green pepper diced
1 pound cheddar cheese diced
1 dozen eggs
1 cup milk
1 teaspoon dry mustard
Salt and pepper
Step 1. Layer the frozen potatoes, bacon, onions, green pepper and
cheese in the crockpot in two or three layers.
Step 2. Finish up with cheese.
Step 3. Beat the eggs, milk, and mustard, salt and pepper together.
Step 4. Pour over the whole mixture.
Step 5. Cook on low for ten to twelve hours.
Step 6. Serve with fresh fruit and toast.
Note: you may substitute ham, cooked sausage, grilled chicken or
grilled turkey for the bacon.
## STRATA WITH HAM AND CHEESE
The combination of ham, cheese and eggs reminds us of quiche, but
because strata doesn’t have a crust it is very easy to make. Strata
is great for breakfast or brunch, because you can make it ahead. If
you put this together the night before, all you will have to do in the
morning is put it in the oven and prepare some fruit or fruit juice
and make your hot beverage. This recipe serves 6.
6 slices bread, white, whole wheat, mixed grain or sourdough
8 ounces shredded Monterey Jack cheese
¾ pound baked ham, diced
6 eggs
2 & ½ cups milk
1 teaspoon Dijon mustard
Salt and pepper to taste
Step 1. Grease a 9 inch square glass baking dish.
Step 2. Arrange 3 slices of the bread in the bottom of the baking
dish. You will have to cut one of the slices into pieces so all of
the bread will fit in a single layer.
Step 3. Sprinkle the cheese on top of the bread.
Step 4. Sprinkle the ham on top of the cheese.
Step 5. Place the remaining 3 slices of bread on top of everything.
You will have to cut one of the slices into pieces so all of the bread
will fit in a single layer.
Step 6. Break the eggs into a mixing bowl and add the milk, mustard,
salt and pepper.
Step 7. Use a whisk to beat the eggs until they are completely
blended but not foamy.
Step 8. Slowly pour the eggs over the bread. If the mixture backs up
and looks like it will run over, wait until some of the egg is
absorbed before pouring in the rest.
Step 9. Cover the strata with aluminum foil and refrigerate until the
next morning.
Step 10. Preheat the oven to 350 degrees.
Step 11. Take the cover off the strata and bake 1 hour. It will
puff, turn golden brown and set like custard in the center.
Step 12. Cool the strata on a wire rack at least 5 minutes before
attempting to cut it.
Note: You can serve strata at the table and cut portions directly from
the baking dish. A small spatula will help in removing the first
piece.
## STRATA WITH COTTAGE CHEESE
Strata is great for brunch, because you can make it ahead. If you put
this together the night before, all you will have to do is put it in
the oven and prepare some fruit or fruit juice and make your hot
beverage.
This recipe serves 4 to 6.
¼ cup butter
16 ounce container of large Kurd cottage cheese, not fat free or low fat
2 green onions
1 to 2 teaspoons prepared mustard
6 slices bread, white, whole wheat, mixed grain or sourdough
6 eggs
1 & ½ cups milk
Salt and pepper to taste
Step 1. Grease an 8 or 9 inch square glass baking dish with 1 to 2
tablespoons butter.
Step 2. Empty the cottage cheese into a medium mixing bowl.
Step 3. Slice the onions very thin using a little of the green tops
and add to the cottage cheese.
Step 4. Put the remaining butter and mustard into a small microwave safe bowl.
Step 5. Microwave the butter on medium about 30 seconds to soften.
Step 6. Blend the butter and mustard until they are smooth.
Step 7. Spread half of the butter mixture on 3 slices of bread.
Step 8. Arrange the bread, buttered side up, in the bottom of the
baking dish. You will have to cut one of the slices into pieces so
all of the bread will fit in a single layer.
Step 9. Spread half of the cottage cheese over the bread.
Step 10. Spread the rest of the butter mixture on the remaining 3
slices of bread.
Step 11. Arrange these slices on top of the cottage cheese, buttered
side down. Cut one of the slices again so all of the bread fits
nicely.
Step 12. Spoon the rest of the cottage cheese over the bread
spreading it evenly.
Step 13. Break the eggs into a medium bowl.
Step 14. Add the milk, salt and pepper.
Step 15. Use a whisk to beat the eggs until they are completely
blended but not foamy.
Step 16. Slowly pour the eggs over the bread. If the mixture backs
up and looks like it will run over, wait until some of the egg is
absorbed before pouring in the rest.
Step 17. Cover the strata with aluminum foil and refrigerate until

## Reflections on Easter
Something happened to me earlier this week that reminded me of a pre
Easter experience I had growing up. First let me explain the recent
situation I found myself in. I hate sleeping in a totally dark room.
I always have. From the time I could talk I would always scream “turn
it on!” every time my parents attempted turning off the hall light
before they went to bed at night. Never mind the fact that I should
have been asleep a long time ago. My Mom tells me that when I was a
baby I used to cry. She’d check my diaper, offer me a bottle and when
she realized I didn’t want either one she’d lay me back in the crib
after rocking me to sleep. Once again she’d attempt turning off the
light only to have the same response from me.
As I got older I never fully outgrew my need to sleep with a light on.
This is especially true of stormy nights. If I can avoid seeing
lightning in a dark room I am very thankful. I’ve had too many close
calls in my lifetime and am aware of how lethal a potential strike can
- Last Tuesday was one of those stormy nights. I had my little
night light in a position that it would shine and minimize the
lightning view but allow me to sleep without interruption. I turned
it on and left the room to do a few last minute things before settling
down. When I returned my light was out. At first I thought it was
the bulb so I reached for the switch to turn it off. Suddenly the
light began to blink on and off rapidly. I said aloud to the room,
“Wow my own lightning show. How cool!” I quickly unplugged that
night light and began to think about where the other one was. It took
me two hours to find it but I didn’t give up. It was raining outside
and I was not going to wake up in a totally dark room in the middle of
a raging storm and be scared until it was over. When that happens I
usually can’t go back to sleep. Once I found my night light I
realized that since it was a different type it had to be plugged into
a different outlet. I quickly looked around my room and realized to
my dismay that I didn’t have one that was usable. It took me another
half hour to move some furniture and shift some other electronics
around in order to plug in that night light. However all’s well that
ends well. After settling down and saying my prayers I was able to
sleep peacefully. Thankfully no thunderstorms came through that night
but if they had I probably would have slept through them.
You may be wondering what all this has to do with Easter. Well you
see when I was 12 I thought I was going to have the opportunity to go
to 4 different camps. One was with the Girl Scouts, one was through
our local public school, another was a Christian camp and last but not
least I had an opportunity to attend a program for blind children
which was held near the New Jersey shore in Avalon. I wanted to
attend all of these so badly and my parents said I could but they told
me first I’d need to learn to sleep in a room without a light on. I
thought this was going to be impossible and believe me I tried
everything I could think of. One day during Lent a friend of mine came
over after school. My Mom put snacks out for us which included candy
bars chips and soda. I was shocked when my friend politely thanked my
Mom then informed her that she wasn’t “allowed” to eat or drink any of
- It turned out that during Lent she gave up junk food. My Mom
offered her some juice and Peanut butter crackers which she
gratefully accepted. As for me I sat down and ate my snack. No way
was I giving up my candy chips and soda. However while we were both
eating our respective choices I kept feeling prickles of guilt. When
my friend and I went to my room to hang out I told her what was on my
mind. She assured me that everything was fine and that once Lent was
over she’d be making up for lost time with many junk food options
available to her once again.
That night I asked my Mom why we don’t give up something for Lent.
She explained it to me but despite that an idea began to take shape in
my mind. What if I attempted sleeping in a totally dark room for the
remainder of the days left in Lent? To me this was no different than
my friend giving up junk food since I hated sleeping in a dark room.
I decided to act upon this by telling my family of my plan and
enlisting their help. Believe it or not I did actually accomplish my
goal. It was rough. Along the way I needed several reminders, pep
talks, and a few times family members had to turn the light off when I
got up and put it on in my attempt to give up on myself.
Today I can still sleep in a totally dark room but still don’t like
- I think I’ve finally figured out why. The other night I was
sleeping without a night light when I awakened to weird noises. I
couldn’t tell if something was going on inside of my apartment or if
it was out in the hall. I heard voices softly arguing and wasn’t sure
if people were actually in the hallway leading to my front door. I was
too scared to sit up especially when I realized that I was having an
awful time adjusting with the limited vision I have. I wanted so
badly to turn on a light but also knew if someone were in my apartment
it would be best for me to play possum. It must have taken about ten
minutes for my vision to adjust enough for me to feel comfortable
navigating in the dark without falling all over everything. When I got
up I was thankful to realize that the people were in the hallway
outside my door. I then scolded myself” now see you wouldn’t have
been so scared if you had put on a night light. So once again I’ve
amade the decision to sleep with a night light on. Hopefully I won’t
ever need it because an intruder is present but I have the security
that whatever wakes me up and whenever it is I will be able to see
what’s happening very quickly.

resurrection.

## Here we are with Easter waiting to come in, and it seems that we’ve
just said good-bye to Christmas.
I’m always at something of a loss to know just what to write about in
April. It isn’t winter, well isn’t supposed to be, and spring isn’t
quite here, so what’s a columnist to do?
Elizabeth Zimmerman must have been thinking along the same lines when
she wrote her book, The Knitter’s Almanac. This delightful book, which
is considered a classic in the world of knitting, is available through
NLS, and can be borrowed from your regional library, or as a free
download from BARD.
There is a pattern for each month of the year. With each pattern Ms.
Zimmerman gives explicit instructions, and tips. In addition to the
patterns and tips for that month she gives little personal writings,
such as the description of quietly fishing, while, she knits,
naturally.
I was especially impressed with a section in which she insists in no
certain terms that one can knit in the dark or while looking at
something else. She talks about how important it is to introduce
children to books at an early age, and explains that she developed the
ability to knit while reading to her children at the same time. Of
course we grin, thinking, “We knew that all along!”
There is also a short appendix giving knitting terms, some familiar, some not.

The Appendix includes such things as instructions for Invisible
cast-on, several methods of cast-off, and more commonly seen things
such as make one, and slip, slip knit.
I am not including any of the patterns here because they do take up a
lot of space. This might be called an asset for the book or a
draw-back, depending on how you look at it. She is rather too
descriptive in some cases, making the directions seem a bit cumbersome
to me, but of course may be just someone else might want.
Her style of writing is delightful, but personally I find her a bit
opinionated, especially in the matter of fiber. She is what one might
call a fiber snob, insisting that one use only wool.
As many of you know, I love working with wool, but in my opinion there
are instances where a machine washable fiber is the only thing.
Leaving out cost, a big consideration for many of us these days, I
have never given a baby or child’s gift made out of wool, nor have I
ever given an all-wool gift to a resident in a nursing home or
hospital. This, like many things in life, however is a matter of
personal preference and circumstances.
It should be remembered, too, that the book was published originally
in 1974, a time when the wool blends weren’t as prevalent as now, and
if memory serves me, the synthetics weren’t as nice. Also in
considering the wool question, more mothers today lead a double life
of mother and career woman.
Although as is obvious from its title this book is primarily for the
knitter, those doing other crafts may find some of the information
about fiber, color, and even some of the design information useful.
If not, I think they will simply enjoy reading the book for the sake
of reading. Some of the descriptions are quite good.
