Saint Patrick’s Day Feast Crazy Crust Cobbler and More
I leapt out of bed at 10 minutes until 7 this morning. On the one hand, it was lovely to sleep in. On the other, I had a cobbler to make, a house to straighten up, a dog to walk and then, I needed to get dressed for the Saint Patrick’s Day potluck I was making the cobbler for.
Once Blue was walked fed and played with, I made a cup of coffee and sat about making the cobbler.
I’d toyed with several options of things I could make and decided on the cobbler because it’s quick, easy, and good.
The Crazy Crust cobbler is one I’ve fallen back on again and again. Here’s the recipe.
Ingredients:
One cup self-rising flour,
½ to ¾ cup milk depending on thickness. Start with ½. cup milk,
two-eggs or three-table-spoons-mayo,
1-half cup melted butter,
1 cup of sugar,
one can drained fruit of choice.
Note, you may reduce the sugar by half if you wish to use pie filling. I chose canned pears.
I also added Maple syrup watch for it in the cooking.
Let’s bake:
While mixing other ingredients take the ½ cup butter and put into your loaf or pie pan. Place in an oven and let melt while oven preheats to 400 degrees F.
In a mixing bowl bring together flour, milk, eggs or mayo and sugar.
Mix with a wooden spoon or spatula until batter is like a very thick creamy doughy texture. Just too gooey to form.
Then add the melted butter. If the batter is thick enough to form add the rest of the milk.
Drain your fruit and pour into a bowl and add two teaspoons of maple syrup. Stir and add to the mix. Mix well.
Pour everything back into your pan. I used a regular sized loaf pan like you make bread in.
Cook at 400 degrees for 30 minutes or until batter is crumbly yet gooey. Serve while hot.
The photo says it was slightly overcooked but not a scrap came home, I had a tiny piece, and it was not overcooked at all. I believe it could have been a bit moister, but I sat it on the oven vent while it was cooling to keep the cobbler warm so that might have been the problem.
I was ready to leave when I took the picture. Which is why I’m standing in the living room. I meant to take it while it was on the counter but didn’t remember until I was headed for the door. So, I just stuck it out in front of me and snapped away.

A person is holding a rectangular baking pan with a baked item inside, which appears to be slightly overcooked or burnt on the top. The pan is being held with both hands, and the person’s thumbs are visible at the bottom corners of the image. In the background, there is a patterned fabric couch with a cushion, positioned against a wall. To the right of the couch, a metal pet bowl is placed on the floor near the wall. An electrical outlet is visible on the wall above the pet bowl. On the floor, to the left of the couch, there is a pair of brown sandals. The floor is carpeted.
Once the cobbler was in the oven, I sat about clearing up my mess and after that was done, I began hunting for what I wanted to wear. I grabbed my Metta Glasses, and the search began. Whenever I didn’t like the choice, I tossed it on top of one of the plastic totes in my bedroom or bathroom in the hall or anywhere else I could land it until later. At one point I think there were a couple of sweaters on Blue’s bed.
🤷♀️
What can I say? I’ve started having fun getting ready to go out and be amongst people again.
Finally, I found what I was looking for, got dressed and began working on my skin and hair. I always put on moisturizer before I dress, so that was the first thing to be done. Then I dressed, styled my hair, and then it was time to check myself out in the mirror.

“The image shows a person standing in front of a mirror, with their reflection visible. The mirror is framed with a wooden border and is mounted on a wall. Above the mirror, there is a light fixture that is turned on, providing illumination. The person is wearing a dark-colored shirt and has their arms crossed in front of them. To the left of the mirror, there is a wall-mounted light switch panel with two switches. On the right side of the mirror, a towel is hanging on a towel bar, and a soap dispenser is mounted on the wall. The wall is painted in a light color.”
Once I was satisfied and had decided which perfume to use it was time to go.
I took Blue to relieve. Then, we jetted back upstairs to grab the cobbler and away we went for a fun time.
As usual everything was lovely and festive. Here’s a shot I took from the corner of the room.

The image depicts a room with several tables and chairs arranged in a communal setting. In the foreground, there are two long tables placed end-to-end, with folding chairs on either side. The chairs have metal frames and are positioned neatly around the tables. On the tables, there are a few small items, possibly napkins or placemats, and some drinking glasses.
In the background, there are several people seated at another table, engaged in conversation or activities. The individuals are mostly older adults, with one person standing and interacting with those seated. The room has a ceiling with a grid pattern and is equipped with ceiling fans and fluorescent lighting. The walls are decorated with green shamrock cutouts, and there are a few framed pictures or certificates hanging on the walls. A large window is visible on the left side of the room, allowing natural light to enter. The floor is made of wood or laminate, and the overall layout suggests a community or recreational space.
Once everyone had arrived, and a prayer had been said, the call was made, “Let the eating begin!” And the line began to form and move.
My apartment manager asked if she could make my plate, and I happily agreed. I am not someone who has any desire to walk through a buffet and try to serve myself while handling a dog and having no vision. Besides, had I helped myself the feast I had never would’ve happened.
😋😋😋
“Let the eating begin!” is right.

The image shows a table with a variety of food items served on disposable plates and bowls. In the foreground, there is a large round plate divided into sections, containing fried chicken, a slice of pie, a deviled egg, a roll, and a mix of vegetables including carrots, peas, and corn. To the left of this plate, there is a white disposable cup filled with a dark liquid, likely a beverage. Behind the main plate, there are three smaller disposable bowls. One contains a salad with shredded vegetables, another has a piece of meat with a slice of carrot and cabbage, and the third bowl contains a brown liquid, possibly a soup or gravy, with a spoon in it. A black rectangular container is placed further back on the table. In the background, there is a wooden piece of furniture, possibly a piano, with decorative flowers on top and a painting partially visible on the wall. A stack of papers or books is also visible near the flowers.
*Note*
What the AI identifies as a slice of pie was not pie it was cornbread.
The plate of desserts had not arrived yet in this photo.
We’re not gonna talk about it!
As you can see, these people take great care of me. I left little behind. I thought of taking an after-eating shot but I was too full. Besides, the demolition was embarrassing. LOL.
Blue behaved beautifully and since I made arrangements to go down a few minutes early I was able to get a good seat so that Blue and I were out of the walkway, and I was pleased to be part of it all.
The rest of the day passed peacefully with a walk, nap, and a little work in between.
We rounded the night off with the Get the Scoop call in the ACB community and now, here I am finishing a beer and sharing all my happiness with you.
Blue is snoring but if he were awake, he would say, “Keep your nose to the ground and your tail waving at the sky.”
