Christmas, Such a Wonderful Thing

Good afternoon, and a Happy Holly Jolly Holiday to You!

Here in Patty’s World the sun is playing peekaboo, whilst trying mightily without success to poke holes in the chilly snow flurry filled clouds!

Prince Edward, A.K.A. Little Eddy is pouting mightily, because I’m ignoring his piteous meows!

“MURRRP! MEOW! Mother! Please? Can’t I have a bite of that delicious smelling meat?”

“No! Pfui! Scat! Away! From the oven!” I scold, Thud! Comes the sound of his landing on the bookcase, as he beats a hasty retreat.

When King Campbell A.K.A. Bubba left me for the land of the Rainbow Bridge to be their king, I never imagined Christmas would be such a magnificent thing.

I thought of it as if it were a nasty, dark day. I couldn’t imagine celebrating with my Bubba gone away. In my head it was something to dread. But then came Prince Edward, and with his loving purring, the awful dread fled.

Now, on this Christmas day, we’ve snow on the ground, taco soup in the crockpot, cookies baking in the oven, and for me, there’s no sadness to be found!

And so, I say to you, wherever you are, whatever you do, find some joy in the day for the creator is waiting to give it to you!

Here’s the recipe for my world-famous taco soup!

Keep in mind that you can double or triple recipe if needed.

You can also change it up to your taste.

Ingredients…

  • Two cans pinto beans. Include Broth from cans.
  • One can whole kernel corn, drained.
  • One-pound seasoned taco meat or use one-pound ground beef and add preferred seasonings. I was using the seasoned taco meat and I added a healthy pouring of hot sauce.
  • One can diced tomatoes with green chilies.
  • One pack chili mix.
  • One pack taco seasoning.
  • My secret ingredient, a half bag of Swedish meatballs. (They fell out of the freezer onto my toe so in they went.)

Let’s get cooking!

In a large skillet over medium heat brown the meat. If using regular ground beef, add in your preferred seasonings, such as onions, pepper, salt, etc.

While meat is browning, put the diced tomatoes, pinto beans, and corn into the crockpot and set pot temp on high.

Using one of your empty cans, mix the taco and chili seasonings by filling the can ¾ of the way with water, and mixing in the powdered mix. Once powder has dissolved pour into pot with beans and corn. Repeat the process for both packs of seasonings.

Mix into beans and corn and stir well.

When meat has finished browning, drain away excess Greece and add meat to crockpot.

Stir all well and let cook on high until soup begins to bubble. Depending upon your crockpot, between two and four hours.

When soup is bubbling well, stir well again, adding liquid if needed for desired broth.

I suggest using tomato juice for additional liquid. If no juice is to hand, tomato soup or sauce, Manwich or spaghetti sauce works well.

Turn crockpot down to medium and let cook two more hours. Then turn down to low and let simmer until you’re ready to eat. The longer it cooks, the better it will be.
